Descripción

A landmark in Japanese knife-making history, these gyuto are the first kitchen knives forged in Apex Ultra steel in Japan, crafted by none other than Naoki Mazaki.

Forged in hon-sanmai construction with a soft iron cladding around the cutting core, these blades showcase Mazaki’s uncompromising dedication to traditional smithing and modern steel innovation. The result is a gyuto that balances heritage and cutting-edge metallurgy, offering exceptional sharpness, edge retention, and ease of sharpening.

Each blade is sold without a handle, giving you the freedom to mount a custom handle that best suits your grip and style. Available in both 210mm and 240mm, these gyuto are ideal for chefs and enthusiasts seeking a versatile workhorse that’s also a piece of knife-making history.

Naoki Mazaki is the first Japanese blacksmith to forge a kitchen knife out of Apex Ultra, a modern high-performance carbon steel developed in Europe specifically for extreme edge retention and toughness.

This adds to his list of achievements because:

  • It bridges traditional Japanese knife-making techniques with cutting-edge Western metallurgy.
  • It shows his willingness to experiment outside the standard Japanese carbon steels (Shirogami, Aogami, etc.), which many makers rarely depart from.
  • It makes his Apex Ultra knives true collectors’ pieces, since they represent a “first” in Japanese blacksmithing history.
