SG2 Powder Steel | Stainless Damascus | Hand Ground by Naohito Myojin

Some knives impress with beautiful Damascus.

Others impress the moment they touch a cutting board.

The Myojin SG2 Damascus 210mm Gyuto does both.

Hand ground by Naohito Myojin, one of Sakai's most celebrated sharpeners, this knife represents the marriage of refined Japanese craftsmanship and uncompromising cutting performance. While many makers forge exceptional blades, it is the final grind that ultimately determines how a knife performs. Few names in modern Japanese knifemaking are as respected for this craft as Myojin-san.

Every bevel, every curve, and every transition has been executed with remarkable precision, resulting in a knife that glides effortlessly through ingredients while maintaining excellent food release and control. It's this attention to geometry that has earned Myojin's work an almost cult-like following among professional chefs and knife enthusiasts around the world.

At its core is SG2 (R2) powder metallurgy stainless steel, widely regarded as one of Japan's finest stainless cutlery steels. It combines exceptional edge retention with impressive corrosion resistance, delivering the long-lasting performance of a premium carbon steel without the maintenance concerns. Whether you're preparing vegetables, slicing proteins, or tackling long prep sessions, the edge remains remarkably keen while requiring minimal upkeep.

Surrounding the core is an elegant stainless Damascus cladding that transforms each knife into a functional work of art. No two patterns are exactly alike, making every piece uniquely its own.

At 210mm, the gyuto is the perfect all-around chef's knife. Large enough to tackle substantial prep yet nimble enough for precise work, it is equally at home in a professional kitchen or the hands of a passionate home cook.

This is a knife built not only to perform—but to inspire confidence every time you pick it up.
